I owe this week’s blog post to Michael. Not only did he cook the fish tacos, but he also very kindly took all the photos for me. So, I got a delicious meal out of it, and I only have to do half the work to make this post happen!
In case you didn’t notice the title of this post, I’m going to be sharing Michael’s fish tacos recipe with you all! You can easily make the fish with an oven instead of an air fryer, but we found that the air fryer does a better job of giving the fish a crispy coating.
I’ll list the ingredients and recipe first, and then if you want to see some photos of the process, you can keep scrolling!
Ingredients
Because Michael is such a star in the kitchen, he doesn’t need to follow a recipe when he’s cooking (unlike me). That being said, there aren’t really any specific measurements for this, because he just eyeballs everything – sorry! Just use your judgment and season everything to taste.
- Cod
- Seasonings of your choice (Michael used chipotle seasoning, cajun, onion granules, chilli sea salt, cumin, and black pepper)
- Breadcrumbs
- Oil (if you want to get fancy you can use infused olive oil – Michael used harissa infused for the fish, and blood orange infused for the veg)
- Red onion (sliced)
- Red bell pepper (sliced)
- Coleslaw or other salad mix
- Shredded cheese
- Sour cream
- Small flour tortillas
Instructions
- Cut your fish into small bite-sized pieces. In a small bowl, mix the fish with the seasonings and oil. Once evenly coated, add in the bread crumbs and mix.
- Place your fish into your air fryer. Cook it at 200 degrees celsius for 20 minutes.
- Heat your oil in a frying pan. Add the onion, bell pepper, and salad mix. Add chipotle seasoning. Cook, stirring occasionally, until vegetables are soft.
- Heat your tortillas in the microwave for 20-30 seconds.
- Assemble your tacos with the fish, veggies, cheese, sour cream, hot sauce, and whatever else you might like in a fish taco!
- Enjoy!
